You remember the chicken in white sauce from yesterday? Well it didn’t all get eaten, so it becomes leftovers again!
I’ve realised this happens a lot at Chez Green; food seems to just keep on going. Little Miss Green’s appetite, like most children’s is pretty unpredictable, changing from one day to the next which is great for getting me to think on my feet (not so great for her who prefers ‘something different’ every day).
Today then, the leftover chicken gets mixed with pasta (in our case macaroni because it’s the quickest to cook) along with sweetcorn and red peppers to make a delicious creamy pasta meal sans plastic packaging.
I’m going to do an experiment too. I make quite a lot of rice pudding, but I do remember as a child loving macaroni pudding – those little circles of pasta drenched in a sweet, creamy sauce from a blue tin used to satistfy my craving for something comforting.
I’m going to cook too much macaroni and see if I can use up the leftovers in a pudding. I’m sure if I make it chocolate flavoured it will be a hit!
