We ate the sun for breakfast

sunshine for breakfast - a zero waste mealWell, I mean, what is this weather all about? We had rain solidly last night and it’s still raining now. A stout, environmentalist, concerned-about-emissions friend said to me the other day “If I had a few hundred quid, I’d board a plane to Crete just to get some sun”. I think many of us are feeling pretty desperate for some rays of sunshine in merry old England this year.

But are we going to let a few grey clouds and a bucket load of rain stop our zero waste week celebrations? No, of course we’re not!

This morning we bought the sunshine to our table at breakfast with one of my special treats.

Now bear with me and open up your mind to this suggestion. It’s become a firm favourite here at Chez Green and is a real comfort food.

All you do is put a handful of porrage oats into a dish and stir in some natural yogurt. This is extra delicious if you soak the oats in yogurt before you go to bed. It has all night to swell into a delicious, creamy, satisfying dish of gloopy loveliness. Think of it as Scottish flummery without the cholesterol or porage without the cooking.

Little Miss Green had some jam stirred into hers, but Mr Green and I ate it as it is.

We top it with fresh fruit and away we go. This morning we had just apples, cut into rays of sunshine. So this morning, even though the sun is not in our sky, it’s warming us from the inside.

    Looks delicious – I do this with muesli, yoghurt, a grated apple and a spoon of honey…heaven sent..
